Ingredients

1 3/4 cups all-purpose flour
1 1/4 teaspoon baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
2/3 cup sugar
1/3 cup shortening
2 large eggs
2 tablespoons milk
1 cup mashed ripe bananas
1/4-1/2 cup chopped nuts

  Directions

Preheat oven to 350°.
Lightly grease 8"x4"x2" loaf pan.

Sift together flour, baking powder, baking soda and salt. Set aside.

In a separate bowl,  beat sugar, and shortening until light, scraping sides of the bowl often.
Beat in eggs one at a time until smooth.
Beat in milk.
Alternately add flour mixture and bananas until creamy smooth.
Fold in nuts.

Pour batter into loaf pan.
Bake at 350° for 60 to 65 minutes or until inserted wooden tooth pick comes out clean. (Do not over bake!)
Cool in pan 10 minutes.
Remove from pan and cool on wire rack.

Tips

Use butter flavored Crisco sticks in place of shortening.
Use very ripe bananas. Bananas that are brown are great!
Mix everything in slowly. Patience is a virtue.
